Welcome to the weekend, my friends! It’s going to be chilly with rain all day here in Ohio. It’s the perfect kind of weather for staying cozy indoors. I have soup started, and a batch of ice cream churning, as I write this. With new books on my Kindle and plans to sit down with a puzzle later as well, I’ll happily take a rainy Saturday when I can fill it this way.
ON THE BLOGS THIS WEEK: This cheesy bacon quiche has been a favorite for many years. What’s not to love about a flaky pie crust filled with fluffy, cheesy eggs and plenty of bacon?
This tender, sweet blueberry banana bread is a irresistible riff on classic banana bread. Much like a cross between blueberry muffins and banana bread, pair a slice of this bread with that bacon quiche and everyone will be grinning.
If you like a classic spinach artichoke dip, you’re going to love this spinach artichoke pasta. We’re talking pasta enrobed in perfectly flavorful, cheesy cream sauce positively bursting with spinach and tender artichokes. Pure heaven!
What do you get when you give humble cauliflower a baked potato glow up? This loaded cauliflower casserole is tender, roasted cauliflower with all the cheddar, bacon, green onion, and sour cream goodness of your favorite loaded baked potato.
As a dedicated fan and vociferous lover of all things sweet and salty, I’m telling you now that chocolate covered potato chips need to be on your must-try list just as soon as possible. I’ll bet you can’t eat just one!
You only need two ingredients and about five minutes to make this easy hot fudge sauce. Creamy, thick, rich, and chocolatey hot fudge is a dream (and often a “must have in the house at all times” requirement) for any ice cream lover!
Give me a brownie and ice cream over pretty much any other baked good and ice cream combination. So, naturally, this chocolate fudge brownie ice cream with a rich, deep chocolate ice cream fully loaded with chunks of chocolatey, chewy, fudgy brownies calls my name – loudly.
What I’m CRAVING: All the greens and vegetables! I’ve been out of the habit of prepping my daily salads on the weekend, so I shopped for produce yesterday and this is going to happen. I’m looking forward to having fresh salads ready to go each day this week.
My FAVORITE THINGS this week are my Epsom salts and foaming bath. The eucalyptus and spearmint not only smell fantastic, but the muscle relief is priceless. Both of these products have been staples in my bathroom for at least 5 years now. I love them both.
What I’m LISTENING to: Never Lose Sight by Chris Tomlin. I’ve loved his version of the song, Good Good Father for years and this entire album is lovely.
What I’m READING: Same Kind of Different As Me by Ron Hall and Denver Moore. While this book would be a great read on its own as pure fiction, the fact that this is a true story makes it infinitely better and completely engrossing. I don’t often recommend a book that made me cry, but I recommend this one to everyone.
